Here's our family's chocolate chip recipe. Homemade cookies always taste better than store bought in my opinion. If you want to use self-rising flour instead of all purpose flour on this recipe, simply omit the baking soda and salt.

You can also freeze this cookie dough for later use for up to 9-12 months. Wrap tightly and store in freezer. When you remove the cookie dough, thaw until soft enough to spoon onto cookie sheet.

Ingredients
  • 2/3 cup shortening
  • 2/3 cup butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 3 cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 12 oz. semi-sweet chocolate chips
  • 1 cup nuts, chopped (pecan or walnuts work best) – optional
Instructions
  1. Preheat your oven to 375 degrees.

  2. Mix thoroughly your shortening, butter, white sugar, brown sugar, eggs and vanilla.

  3. Stir in the remaining ingredients.

  4. Drop dough by rounded teaspoonfuls 2 inches apart on ungreased cookie sheet.

  5. Bake 8-10 minutes, or until lightly browned.

  6. Cool slightly before removing from cookie sheet.

  7. Repeat for remaining dough.

Peanut Butter Kiss Cookies

Ingredients
  • 3/4 cup peanut butter
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 3 Tbsp. milk
  • 1 1/2 tsp. vanilla
  • 1 1/2 tsp. baking soda
  • 3/4 tsp. salt
  • 1 bag Hershey Kisses
Instructions
  1. Preheat oven to 375 degrees.

  2. Cream together peanut butter, brown sugar and white sugar.

  3. Add milk and vanilla.

  4. Sift together baking soda and salt, then add to mixture. Beat well.

  5. Shape into balls.

  6. Roll in extra white sugar and place on ungreased cookie sheet.

  7. Bake at 375 for 8 minutes.

  8. Remove from oven. Place Hershey Kiss on each cookie.

  9. Return to oven and cook for an additional 2-5 minutes.

  10. Remove from oven. Place on wax paper or foil to cool. Makes 3 dozen.

  • 8 oz. cream cheese, softened
  • 14 oz. Eagle brand sweetened condensed milk
  • 1/3 cup Real Lemon Reconstituted lemon juice
  • 1 tsp. vanilla extract
  • 1 graham cracker ready to use pie crust
  • 1 can cherry pie filling, chilled
Instructions
  1. In a medium bowl, beat cream chesse until light and fluffy.

  2. Add condensed milk and blend thoroughly.

  3. Stir in real lemon juice and vanilla.

  4. Pour into pie crust.

  5. Chill for 3 hours or until set.

  6. Top with desired amount of pie filling and serve. Refrigerate leftovers.

These two ingredient pumpkin muffins are easy, delicious and inexpensive – the trifecta. This recipe is perfect for celebrating Fall.

  • 1 spice cake mix, can substitute a yellow cake mix if you don't have the spice (we prefer Duncan Hines)
  • 15 oz. pumpkin puree (do not use pumpkin pie mix)
  • pecans or walnuts (optional)
  • raisins (optional)
Instructions
  1. Mix your cake mix (do not add any ingredients on the box, just use the mix itself) with the pumpkin puree using a mixer. Mix until well combined.

  2. Next add nuts or raisins if you want and mix well.

  3. The batter will be very stiff. Spoon into muffin cups or a sprayed muffin tin. Fill until 2/3rds full.

  4. Bake at 350 degrees for 18-22 minutes until toothpick comes out clean.

Many times there are only two of us eating barbecue chicken, so I hate heating up the oven for just the two of us. So we developed this recipe for cooking barbecue chicken in the air fryer. It came out moist and delicious. This will definitely be one that we add to our chicken rotation.

Ingredients
  • 4 boneless, skinless chicken breasts (medium size)
  • 2 Tbsp. brown sugar
  • 2 tsp. chili powder
  • 3/4 tsp. smoked paprika
  • 1/2 tsp. garlic powder
  • 3/8 tsp. salt
  • olive oil for basting
Instructions
  1. Make your dry rub from the dry ingredients.

  2. Trim excess fat from your chicken.

  3. Rub the dry rub on your chicken on both sides.

  4. Drizzle olive oil over the top of your chicken and brush to even it out. Flip the chicken and repeat.

  5. Place your chicken in the air fryer and cook at 400 degrees for 13 minutes, flipping halfway.

This is one of our family's long time favorite recipes.

  • 2 boxes beef broth (32 oz. each)
  • 1/2 dozen crabs, cleaned
  • 32 oz. frozen mixed vegetables
  • 10.5 oz. can beef consomme
  • salt (to taste)
  • pepper (to taste)
  • seafood seasoning (to taste)
Instructions
  1. Fill a large pot with water. Combine all ingredients.

  2. Cook 30 – 45 minutes, until done.

  3. Can add noodles if desired.

  4. Soup can spoil if left out too long. Refrigerate after serving.

Ingredients
  • 1/2 cup uncooked rice
  • 1 cup water
  • 1 quart milk
  • 1/8 lb. butter
  • pinch of salt
  • 2 eggs
  • 1/2 cup sugar
  • pinch of nutmeg
  • 1/2 cup raisins
  • 1 tsp. vanilla
Instructions
  1. Boil the uncooked rice, water, milk, butter and salt for one and a half hours. Stir occasionally.

  2. Beat lightly your eggs, sugar and nutmeg.

  3. Turn down the pot to low and add egg mixture slowly.

  4. Slowly add your vanilla and raisins and cook on low until thick enough to coat the spoon, stirring occasionally.

  5. Remove from heat and sprinkle additional nutmeg over top before serving.

  • 1 cup milk
  • 1 egg, beaten
  • 1/4 cup shortening, melted
  • 2 cups flour
  • 3 tsp. baking powder
  • 3 Tbsp. sugar
  • 1/2 tsp. salt
Instructions
  1. Mix milk, egg, and shortening.

  2. Sift remaining ingredients together and lightly add to previous mixture. Do NOT beat.

  3. Pour batter into a greased muffin pans, 2/3 of the way full.

  4. Bake at 425 degrees for 20-25 minutes.

I don't know about you, but one of my favorite comfort foods is a grilled cheese sandwich. Cracker Barrel makes one of the best. After some experimentation, we think this recipe is spot on.

  • 4 slices sourdough bread
  • 4 slices colby cheese
  • 2 slices provolone cheese, not smoked
  • shaved parmesan cheese
  • butter
Instructions
  1. Butter your sourdough bread.

  2. Place one slice of colby and provolone cheese on top of the buttered bread.

  3. Cover with a layer of shaved parmesan cheese.

  4. Add another slice of colby cheese on top of the parmesan cheese.

  5. Top with your second slice of buttered slice of sourdough bread.

  6. Grill on medium heat until melted, flipping halfway during cooking.

Here's a quick and easy recipe with just crescent rolls and your favorite shredded cheeses. Makes 2 pockets per person. Tasty and inexpensive – one of my favorite combinations!

Ingredients
  • 1 8-pack crescent rolls
  • 2-3 packs shredded cheese (I used colby/jack and sharp cheddar, three cheeses tastes best)
Instructions
  1. Take two of your crescent roll triangles and form them into a rectangle on a cookie sheet. You'll need to use your finger to get rid of the crease in the middle where the two triangles connect. Repeat with remaining triangles. It should make four rectangles.

  2. Fill half the rectangle with a small handful of three cheeses (I use one mixed – colby/jack, and sharp cheddar).

  3. Pull the side without cheese over the top of the side with cheese on each pocket.

  4. Pinch the edges together by pushing down on them with a fork.

  5. Make two holes in the top of each pocket.

  6. Cook at the temperature and time listed on the crescent roll package. Serve warm.
