Ingredients
  • 4 1/2 cups sugar
  • 12 oz. evaporated milk (I use the brand PET)
  • 18 oz. chocolate bits
  • 1/2 lb. margarine
  • 1 Tbsp. vanilla
  • 1 cup walnuts (optional)
Instructions
  1. Mix your sugar and evaporated milk in a large saucepan.

  2. Cook on low heat until sugar is dissolved. Stirring almost constantly. Keep an eye on this as it can burn easily.

  3. Boil on low heat for 7 minutes, stirring almost constantly.

  4. Remove from burner and add chocolate bits and margarine. Stir until melted.

  5. Add your vanilla (and nuts if you want) and pour into a large pan. (I use a 9×13 pan.)

  6. Place into the refrigerator. Cut after hardened.

Ingredients
  • 4 medium apples (peeled, cored, and thinly sliced)
Sauce
  • 1/2 cup brown sugar, packed
  • 1/2 tsp cinnamon
  • 1/4 cup water
Crumble
  • 1/2 cup flour
  • 1/2 cup oats
  • 1/2 cup brown sugar, packed
  • 1/2 cup softened butter (do not melt)
  • 1/2 tsp cinnamon
Instructions
  1. Preheat your oven to 375 degrees.

  2. Spray a 8×8 glass 8×8 dish with cooking spray.

  3. Peel and core your apples. Cut them into thin slices. Place them on the bottom of your glass dish, spreading evenly.

  4. Make your sauce by combining 1/2 cup packed brown sugar, 1/2 tsp. cinnamon, and 1/4 cup water. Pour sauce over apples.

  5. Now you make your crumble. Mix 1/2 tsp. cinnamon, 1/2 cup flour, 1/2 cup oats, 1/2 cup packed brown sugar, and 1/2 cup softened butter (do not melt). Use a pastry blender or a fork to mix until crumbly. Sprinkle over the top of the apple mixture.

  6. Sprinkle a little cinnamon over the top and bake at 375 degrees for 30-40 minutes, until the apples are tender.

  7. Let cool for 10 minutes and serve with ice cream or whipped cream. You can also drizzle caramel ice cream syrup topping over the top.

Coffee Cake

Ingredients
  • 1/4 cup coconut oil (or vegetable oil)
  • 1 egg
  • 1/2 cup milk
  • 1 1/2 cup flour
  • 2/3 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
Topping
  • 1/4 cup packed brown sugar
  • 1 Tbsp. butter, melted
  • 1 Tbsp. flour
  • 1 tsp. cinnamon
  • 1/2 cup chopped nuts (optional)
Instructions
  1. Mix your oil, egg and milk in a large mixing bowl, whisking them together.

  2. In a small bowl combine your flour, sugar, baking powder and salt. Sift together or mix with a whisk.

  3. Add your dry ingredients to your wet ingredients in 1/3rds, stirring well each time.

  4. Pour into a greased 9×9" or 8×8" pan.

For your topping
  1. Melt 1 Tbsp butter in a 2 or 4 cup measuring cup.

  2. Add the packed brown sugar, flour, cinnamon and chopped nuts to the measuring cup.

  3. Stir and sprinkle on top of the cake. I find using my fingers to sprinkle works best because it wants to stick to itself.

  4. Bake in a regular oven 375 degrees for 25 minutes. In my convection, air fryer toaster oven, I bake it 375 degrees for 17 minutes.

My father-in-law is a big homemade oatmeal cookie lover. I decided to give a new recipe a try a few nights ago when he and my mother-in-law came over for dinner. They were a big hit, even with my youngest (super picky) and middle son (who had to be convinced to even try something that had oatmeal in it).

Ingredients
  • 2 eggs
  • 2 sticks salted butter, softened (not melted)
  • 2 cups light brown sugar, packed
  • 2 tsp vanilla extract
  • 2 tsp cinnamon
  • 1 1/2 cups all purpose flour 
  • 1 tsp salt
  • 1/2 tsp baking soda 
  • 3 cups oats 
Instructions
  1. Preheat the oven to 350 degrees.

  2. Mix your eggs in a large mixing bowl.

  3. Add your brown sugar and butter mix until blended.

  4. Mix in your vanilla and cinnamon.

  5. In a medium bowl, mix together your flour, salt, and baking soda.

  6. Add it to the large mixing bowl in 3 batches, mixing until combined.

  7. Add the oats and mix well.

  8. Drop heaping teaspoons full of dough onto baking sheets, spacing them a couple inches apart. Bake 10 minutes. Repeat until out of dough.

  9. Let the cookies cool slightly on cooling rack. Best served warm.

Peanut Butter Kiss Cookies

  • 3/4 cup peanut butter
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 3 Tbsp. milk

  • 1 1/2 tsp. baking soda
  • 3/4 tsp. salt
  • 1 bag Hershey Kisses
Instructions
  1. Preheat oven to 375 degrees.

  2. Cream together peanut butter, brown sugar and white sugar.

  3. Add milk and vanilla.

  4. Sift together baking soda and salt, then add to mixture. Beat well.

  5. Shape into balls.

  6. Roll in extra white sugar and place on ungreased cookie sheet.

  7. Bake at 375 for 8 minutes.

  8. Remove from oven. Place Hershey Kiss on each cookie.

  9. Return to oven and cook for an additional 2-5 minutes.

  10. Remove from oven. Place on wax paper or foil to cool. Makes 3 dozen.

These are so delicious that you can't eat just one, or two, or three…They're sure to be a hit with your family!

Ingredients
  • 8 oz. refrigerated crescent rolls
  • 1/3 cup butter, cut into pieces
  • 1/3 cup brown sugar, packed
  • 2 Tbsp. light corn syrup
  • 1 1/2 tsp. milk
  • 2 tsp. sugar
  • 1/2 tsp. cinnamon
  • chopped pecans (optional)
Instructions
  1. Preheat your oven to 375 degrees.

  2. Grease a 9 inch pie plate. If you want pecans, place them in the bottom of your pie plate.

  3. In a small bowl, mix your white sugar and cinnamon. Set aside.

  4. Separate your crescent dough into 4 rectangles, pressing the indentations together.

  5. Cover your rectangles evenly with the cinnamon sugar mixture. 

  6. Roll up your rectangles jelly roll style, starting with the long side. Pinch the seams to seal.

  7. Cut each roll into 9 pieces.

  8. In a small sauce pan, mix your brown sugar, butter, corn syrup and milk.

  9. Stir and cook over medium heat until blended. Pour into your greased pie plate.

  10. Put your rolls in your pie dish, placing them cut side down. 

  11. Bake at 375 degrees for 15-18 minutes, until golden brown.

  12. Let your bites cool for 1 minutes before flipping the plate over onto a serving dish. Makes 36 cinnamon roll bites.

  • 8 oz. cream cheese, softened
  • 14 oz. Eagle brand sweetened condensed milk
  • 1/3 cup Real Lemon Reconstituted lemon juice
  • 1 tsp. vanilla extract
  • 1 graham cracker ready to use pie crust
  • 1 can cherry pie filling, chilled
Instructions
  1. In a medium bowl, beat cream chesse until light and fluffy.

  2. Add condensed milk and blend thoroughly.

  3. Stir in real lemon juice and vanilla.

  4. Pour into pie crust.

  5. Chill for 3 hours or until set.

  6. Top with desired amount of pie filling and serve. Refrigerate leftovers.

  • 1 pkg. dry yellow cake mix (reserve 2/3 cup cake mix)
  • 1/2 cup margarine, melted
  • 1 egg
  • 1 cup chopped pecans
Filling
  • 2/3 cup reserved cake mix
  • 1/2 cup brown sugar, firmly packed
  • 1 1/2 cups dark corn syrup
  • 1 tsp. vanilla
  • 3 eggs
Instructions
  1. Grease the bottom and sides of a 9×13 baking pan.

  2. Reserve 2/3 cup dry cake mix for the filling.

  3. In a large mixing bowl combine remaining dry cake mix, margarine, and 1 egg. Mix until crumbly.

  4. Press into greased pan.

  5. Bake at 350 degrees for 15 minutes, until light golden brown.

  6. Meanwhile, prepare your filling.

  7. In a large mixing bowl combine all of your filling ingredients and beat it on medium speed for 1-2 minutes.

  8. Pour the filling over the partially baked crust and sprinkle the pecans over the top.

  9. Return to the oven and cook for an additional 30 minutes until filling is set.

  10. Cool and then cut into bars.

  • 2 cups sugar
  • 4 oz. chocolate chips
  • 1/2 cup butter
  • 4 eggs
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 1 cup bread flour
  • 1 cup walnut pieces (optional)
Instructions
  1. Preheat oven to 325 degrees.

  2. Grease and flour a 9×13 pan.

  3. Melt, then cool chocolate and butter. Set aside.

  4. Beat your eggs and salt until light.

  5. Sift sugar and add gradually to the egg mixture.

  6. Continue to beat until these ingredients are light and creamy.

  7. Fold in the melted chocolate mixture and vanilla.

  8. Sift and add your bread flour.

  9. Beat the batter until it is smooth.

  10. Fold in your walnut pieces. (Optional)

  11. Pour the batter into your greased pan and bake at 325 degrees for 35 to 45 minutes.

  12. Remove from oven and set aside to cool. When cooled, cut into squares. Makes about 45 one by two inch brownies.
