Ingredients
  • 1 lb. ground beef
  • 1 large onion
  • 1 green pepper (for meat sauce)
  • 1 lb. can of tomatoes
  • 2 Tbsp. worcestershire sauce
  • 8 oz. package macaroni
  • Velveeta cheese (or American Cheese slices)
Instructions
  1. Saute ground beef, onion and green pepper until meat is browned.

  2. Add tomatoes and worcestershire sauce. If you use more than one pound of ground beef, add an extra can of tomatoes. Bring to a boil and then reduce to a simmer.

  3. Cook macaroni according to directions on package.

  4. Simmer sauce until macaroni is complete. Do not start the macaroni until the sauce has started to simmer for more flavor.

  5. Combine the sauce and the macaroni and pour into a baking dish.

  6. Cover with Velveeta cheese or American cheese slices.

  7. Cook in oven at 350 degrees for 45 minutes, or until the cheese is browned and melted.

With the Corona virus causing us to eat at home more often and not always having the ingredients we need due to a shortage in our area we have started to experiment with new ways to cook things. Today we tried foil packs to give us the camping cookout feeling at home.

Ingredients
For the Steak
  • 23 oz. steak, cut into 2 inch cubes
  • 1 Tbsp. smoked paprika
  • 1 1/2 tsp. garlic powder
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. onion powder
  • 1/2 tsp. thyme
  • 1/2 tsp. oregano
  • 1/2 tsp. brown sugar
Vegetables
  • 4 medium potatoes, peeled and cut into 1/2 inch pieces
  • 2 carrots, peeled and cut into 1/2 inch pieces (if using baby carrots, either half or quarter them to get 1/2 inch pieces)
  • salt (to taste)
  • shredded cheddar cheese
  • bacon bits
Instructions
  1. Wash, cut and peel your carrots and potatoes.

  2. Boil your potatoes and carrots for 5 minutes in a saucepan with no lid.

  3. Set out 4 pieces of aluminum foil, at least 12×12 inches. Place on large cookie sheet.

  4. Mix your steak seasoning in a mixing bowl.

  5. Cut your steak into 2 inch pieces. Toss your steak in the seasoning.

  6. Drain your carrots and potatoes. Salt to taste.

  7. Add your steak, carrots and potatoes to the middle of the foil squares. Dividing evenly among the packs.

  8. Top potatoes with shredded cheese.

  9. Lightly close your packs at the top.

  10. Bake the steak foil packs at 425°F for around 25-30 minutes, or until done to your liking.

  11. Remove from oven and place on plates. Carefully open the packs and top your potatoes with bacon bits. Serve in packs for a creative look.

Honey Ginger Chicken

Ingredients
  • 3 lbs. chicken drumsticks and thighs
  • 3 Tbsp. shortening
  • 3 Tbsp. butter or margarine
  • 1/3 cup all purpose flour
  • 3/4 tsp. salt
  • 1/2 tsp. ground ginger
  • 1/4 tsp. pepper
  • 1/3 cup honey
  • 1/3 cup chili sauce
  • 1/3 cup soy sauce
Instructions
  1. Preheat oven to 425 degrees.

  2. Heat butter and shortening in 13×9 baking pan in the oven until melted.

  3. Mix flour, salt, 1/2 tsp. ginger and pepper.

  4. Coat your chicken pieces thoroughly with flour mixture.

  5. Add chicken to cooking dish and cook for 35-40 minutes.

Ingredients
  • 2 cups sugar
  • 4 oz. chocolate chips
  • 1/2 cup butter
  • 4 eggs
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 1 cup bread flour
  • 1 cup walnut pieces (optional)
Instructions
  1. Preheat oven to 325 degrees.

  2. Grease and flour a 9×13 pan.

  3. Melt, then cool chocolate and butter. Set aside.

  4. Beat your eggs and salt until light.

  5. Sift sugar and add gradually to the egg mixture.

  6. Continue to beat until these ingredients are light and creamy.

  7. Fold in the melted chocolate mixture and vanilla.

  8. Sift and add your bread flour.

  9. Beat the batter until it is smooth.

  10. Fold in your walnut pieces. (Optional)

  11. Pour the batter into your greased pan and bake at 325 degrees for 35 to 45 minutes.

  12. Remove from oven and set aside to cool. When cooled, cut into squares. Makes about 45 one by two inch brownies.

The first day we made this recipe we were too hungry to take a photo. The photo used with the recipe was from the next day when we had the pot roast with garden fresh lima beans and our hasselback potatoes.

Ingredients
  • 2-3 lb. pot roast, salt and pepper to taste
  • 5-6 medium potatoes, peeled and cut into 2 inch pieces
  • 4-5 carrots, peeled and cut into 2 inch pieces
  • 1 medium onion, cut into slivers
  • 1 1/4 cups beef broth
  • 1 1/2 tsp. Worcestershire sauce
  • 3/4 tsp. garlic powder
  • 3/4 tsp. smoked paprika
  • 1/2 tsp. Italian seasoning
  • 1 bay leaf
  • 1/2 tsp. salt
  • 1 Tbsp. olive oil
  • 2 Tbsp. corn starch
Instructions
  1. One hour before cooking, season your pot roast with salt and pepper (to taste) and return to refrigerator.

  2. Cut and peel your potatoes and carrots. Cut your onion.

  3. Place your potatoes, carrots and onions on the bottom of your crockpot.

  4. Sprinkle your salt over the top of your vegetables.

  5. Heat your olive oil in a large pot over medium high heat.

  6. Sear your pot roast until lightly browned on both sides.

  7. Place your pot roast on top of your vegetables in the crockpot.

  8. Sprinkle your garlic powder, Italian seasoning, bay leaf, and smoked paprika on top of the roast. Pour your beef broth and Worcestershire sauce over the top.

  9. Cook for 3-4 hours on high.

  10. To make a thicker gravy – Pour the liquid from the crockpot into a medium sized saucepan. Skim any fat from off the top the liquid. Bring the liquid to a simmer over medium heat.

  11. Whisk together 2 Tablespoons of corn starch with 3 Tablespoons of cold water. Add to the gravy.

  12. Bring to a boil and cook for 1 minute or until gravy has just thickened.

Ingredients
  • 11 cups boiling water
  • 1 lb. navy beans
  • 2 tsp. salt
  • 3/4 cup grated carrots
  • 2/3 cup finely chopped onion
  • 3/4 cup chopped celery
  • 1 1/2 lb. ham hocks or ham chunks (smoked)
Rivels
  • 2 cups flour
  • 1 egg
  • salt to taste
  • pepper to taste
Instructions
  1. Bring your water to a boil.

  2. While waiting for water to boil, pick over and wash beans.

  3. Add your beans and ham into boiling water and stir.

  4. Boil for 2 minutes, then remove from heat. Cover and let stand 1 hour.

  5. After soaking, add salt and remaining ingredients.

  6. Gently boil in covered pan for two hours, or until beans are tender. (Add boiling water if needed.)

  7. Remove ham and finely dice the meat.

  8. Partially mash the beans and add your diced ham.

  9. Make your rivels by mixing together 2 cups of flour, 1 egg and salt and pepper to taste. Mix until crumbly and then add to your soup.

  10. Taste soup to see if additional salt or pepper needs to be added for your taste.

  11. Simmer for 1/2 hour.

  • 2-3 fried potatoes
  • 1 large onion
  • a little water
  • 1 green pepper (optional)
Instructions
  1. Fry your potatoes.

  2. Place the rest of the ingredients into the frying pan with the potatoes and steam.

  3. When it begins to boil, turn the burner to simmer and cover.

  4. Cook until the vegetables are done to your preference.

  • 1 – 2 1/2 cans sliced pineapple, drained (reserve the juice)
  • 1 green pepper, chopped
  • 1 bag salad greens or lettuce
  • 6 oz. cream cheese
  • 1/2 cup coconut
Instructions
  1. Place your salad greens (or lettuce) into large bowl.

  2. Place drained pineapple rings on top.

  3. Place chopped green pepper pieces around the tops of the pineapple rings.

  4. Mix 4 Tbsp. of the pineapple juice with your cream cheese and fill the centers of your pineapple rings with the mixture.

  5. Top with coconut and serve with your desired dressing.

Southern Pecan Pie

Ingredients
  • 1 unbaked pie shell
  • 1 egg white, beaten
  • 3 eggs
  • 4 Tbsp. sugar
  • 2 Tbsp. flour
  • 1 1/2 cup light or dark corn syrup
  • 1 tsp. vanilla
  • 1 1/2 tsp. salt
  • 1 cup whole pecans, shelled
Instructions
  1. Brush unbaked pie shell with egg whites and put into oven for 3-5 minutes at 450 degrees to set the crust.

  2. Remove from oven and turn temperature down to 375 degrees.

  3. Beat eggs until light.

  4. Mix sugar and flour and add to your eggs, beating well.

  5. Add corn syrup, vanilla and salt and stir.

  6. Sprinkle shelled pecans into pie shell and add your filling.

  7. Bake in your oven at 375 degrees for 45 minutes. Makes one 9 inch pie.

Ingredients
  • 8 chicken breasts
  • 1 cup chopped celery
  • 1/2 cup blanched almonds
  • 1 chopped green pepper
  • 1 clove garlic
  • 1 tsp. oregano
  • 1 qt. canned tomatoes
  • 1 small can sliced mushrooms
  • 1/2 tsp. curry powder
  • 1/4 lb. butter
  • salt and pepper (to taste)
Instructions
  1. Fry chicken until brown. Drain and keep hot.

  2. Saute garlic in butter.

  3. Add celery and pepper and cook until soft.

  4. Add tomatoes, mushrooms, almonds and seasonings. Simmer for 30 minutes.

  5. Add chicken and simmer until hot.

  6. Serve on rice or spaghetti.
