My father-in-law is a big homemade oatmeal cookie lover. I decided to give a new recipe a try a few nights ago when he and my mother-in-law came over for dinner. They were a big hit, even with my youngest (super picky) and middle son (who had to be convinced to even try something that had oatmeal in it).

Ingredients
  • 2 eggs
  • 2 sticks salted butter, softened (not melted)
  • 2 cups light brown sugar, packed
  • 2 tsp vanilla extract
  • 2 tsp cinnamon
  • 1 1/2 cups all purpose flour 
  • 1 tsp salt
  • 1/2 tsp baking soda 
  • 3 cups oats 
Instructions
  1. Preheat the oven to 350 degrees.

  2. Mix your eggs in a large mixing bowl.

  3. Add your brown sugar and butter mix until blended.

  4. Mix in your vanilla and cinnamon.

  5. In a medium bowl, mix together your flour, salt, and baking soda.

  6. Add it to the large mixing bowl in 3 batches, mixing until combined.

  7. Add the oats and mix well.

  8. Drop heaping teaspoons full of dough onto baking sheets, spacing them a couple inches apart. Bake 10 minutes. Repeat until out of dough.

  9. Let the cookies cool slightly on cooling rack. Best served warm.

Zucchini Carrot Bread

Zucchini Carrot Bread

Zucchini and carrots add loads of moisture to this quick bread so it should be stored in the refrigerator if you are not eating/finishing it in 2 days

Ingredients
  • 1 1/2 cups all purpose flour
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 cup vegetable oil (can use coconut oil instead for a healthier version)
  • 1/4 cup applesauce (can use sweetened or unsweetened)
  • 1 large egg and 1 extra egg yolk
  • 1/2 cup brown sugar
  • 1/4 cup white sugar (if you use sweetened applesauce take out 1 Tbsp.)
  • 2 tsp. vanilla
  • 1 cup zucchini, grated
  • 3/4 cup carrots, grated
Glaze
  • 2 oz. cream cheese (room temperature)
  • 2 Tbsp. butter (room temperature)
  • 1/2 cup powdered sugar
  • 1 tsp. vanilla
  • pinch of salt
Instructions
  1. Preheat oven to 325 degrees.

  2. Spray 9×5 loaf pan with non-stick spray

  3. Mix in a small bowl your flour, cinnamon, nutmeg, baking soda, baking powder and salt.

  4. In a large mixing bowl, combine your oil, applesauce and eggs. Then add both sugars and vanilla and whisk until it is mixed well.

  5. Add your cinnamon mixture your egg mixture and stir until flour just disappears. Do not over mix.

  6. Add your zucchini and carrots to bowl and stir.

  7. Spread the batter into your loaf pan and bake 50-60 minutes. (mine took 50 min). Check with a toothpick in the center to see if it comes out clean.

  8. Cool for 15 minutes in the pan on a wire rack before removing.

  9. Prepare your glaze by placing your cream cheese and butter in a microwave safe bowl and microwave until soft enough to stir together, but not melted. (about 30-60 seconds)

  10. Add the remaining glaze ingredients and stir. Cover the top of your bread and serve.

  11. The glaze does add another flavor dimension, however you can skip the glaze if you are not going to finish the bread quickly and just eat it with cream cheese.

Chicken Parmesan Skillet Casserole

Ingredients
  • 1-2 chicken breasts (depending on size)
  • 1/8-1/4 tsp. Italian seasoning (enough to sprinkle on both sides)
  • 1/8-1/4 tsp. garlic powder (enough to sprinkle on both sides)
  • 1/8-1/4 tsp. basil (enough to sprinkle on both sides)
  • 2/3 jar spaghetti sauce (I used a basil tomato)
  • 2 servings spaghetti (cook as directed)
  • 1 Tbsp. butter
  • salt and pepper (to taste)
  • shredded mozzarella (for topping)
Instructions
  1. Take one fat chicken breast and cut it horizontally making 2 servings or 2 smaller chicken breasts.

  2. Melted your butter in the bottom of your pan and salt and pepper the chicken.

  3. Sprinkle garlic powder, Italian seasoning and Basil on top and brown the chicken one side. Flip it and put the remaining spices on the other side and brown it. 

  4. Pour your spaghetti sauce on top and let it simmer with the lid on. Cook to an internal temperature of 165 degrees.

  5. Cook your spaghetti according to the package instructions.

  6. Place your spaghetti on your plate. Spoon a little sauce over the spaghetti, then add your chicken on top of the spaghetti. Top the dish with shredded mozzarella,

  • 3/4 cup peanut butter
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 3 Tbsp. milk
  • 1 1/2 tsp. vanilla
  • 1 1/2 tsp. baking soda
  • 3/4 tsp. salt
  • 1 bag Hershey Kisses
Instructions
  1. Preheat oven to 375 degrees.

  2. Cream together peanut butter, brown sugar and white sugar.

  3. Add milk and vanilla.

  4. Sift together baking soda and salt, then add to mixture. Beat well.

  5. Shape into balls.

  6. Roll in extra white sugar and place on ungreased cookie sheet.

  7. Bake at 375 for 8 minutes.

  8. Remove from oven. Place Hershey Kiss on each cookie.

  9. Return to oven and cook for an additional 2-5 minutes.

  10. Remove from oven. Place on wax paper or foil to cool. Makes 3 dozen.

  • 1 1/3 cups sugar
  • 2 1/3 sticks real butter
  • 4 cups flour
  • 2 tsp. vanilla
  • 1 tsp. salt

This recipe can be easily doubled for family size. You can also change it up by adding broccoli.

Ingredients
  • 2 chicken breasts, boned and diced
  • 3 Tbsp. oil
  • 2 Tbsp. soy sauce
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. cornstarch
  • 2 Tbsp. water
  • 1/2 cup celery, diced
  • 1/4 cup onion, diced
  • 1 cup chicken broth, hot
  • 4 oz. canned mushrooms, drained (can substitute fresh)
  • 1/2 cup almonds, blanched and toasted
  • 1/2 cup peas, fresh or frozen
  • 12 oz. bag of frozen broccoli pieces (optional)
Instructions
  1. Heat your oil in a wok and stir fry the chicken for 3 minutes.

  2. Add salt, pepper, soy sauce, celery, peas, onion and mushrooms.

  3. Cook for 2 minutes and then stir in your broth.

  4. Cover and cook over low heat for 5 minutes.

  5. Mix together the water and cornstarch. Stir into the mixture until it thickens.

  6. Add almonds and serve over rice.

Bite Size Cinnamon Rolls

These are so delicious that you can't eat just one, or two, or three…They're sure to be a hit with your family!

Ingredients
  • 8 oz. refrigerated crescent rolls
  • 1/3 cup butter, cut into pieces
  • 1/3 cup brown sugar, packed
  • 2 Tbsp. light corn syrup
  • 1 1/2 tsp. milk
  • 2 tsp. sugar
  • 1/2 tsp. cinnamon
  • chopped pecans (optional)
Instructions
  1. Preheat your oven to 375 degrees.

  2. Grease a 9 inch pie plate. If you want pecans, place them in the bottom of your pie plate.

  3. In a small bowl, mix your white sugar and cinnamon. Set aside.

  4. Separate your crescent dough into 4 rectangles, pressing the indentations together.

  5. Cover your rectangles evenly with the cinnamon sugar mixture. 

  6. Roll up your rectangles jelly roll style, starting with the long side. Pinch the seams to seal.

  7. Cut each roll into 9 pieces.

  8. In a small sauce pan, mix your brown sugar, butter, corn syrup and milk.

  9. Stir and cook over medium heat until blended. Pour into your greased pie plate.

  10. Put your rolls in your pie dish, placing them cut side down. 

  11. Bake at 375 degrees for 15-18 minutes, until golden brown.

  12. Let your bites cool for 1 minutes before flipping the plate over onto a serving dish. Makes 36 cinnamon roll bites.

Barbecue Pasta

Barbecue Pasta

Serve it with a salad and or fruit and you have a meal. This pasta tastes well reheated.

Ingredients
  • 1 lb. ground beef (I use 90 percent, but use at least 85 percent)
  • 1 1/2 cups macaroni (or any small pasta)
  • 1 medium bell pepper, chopped
  • 2 1/2 cups beef broth
  • 3/4 -1 cup barbecue sauce
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup frozen corn (or 1 can of corn, drained)
  • 1 1/2 cups shredded cheddar
Instructions
  1. Brown your ground beef in a 12 inch non stick skillet for about 5 minutes.

  2. Add your chopped bell pepper to your meat and continue cooking until the meat is cooked completely through.

  3. Drain your meat and stir in the pasta, broth, salt, pepper and barbecue sauce. Heat until boiling.

  4. Cover and cook on medium for about 15 minutes, until pasta is tender. Stir occasionally.

  5. Add your corn and 1 cup of cheddar cheese to your ground beef mixture. Stir to combine.

  6. Cover and cook 4-5 minutes longer. until the corn is hot and the cheese is melted.

  7. Top with additional cheese.

  • 8 slices bread, torn into 1/2 inch pieces
  • 2 granny smith apples, peeled, cored and chopped
  • 1/2 cup dried cranberries
  • 2 cups milk
  • 1 cup sugar
  • 2 eggs
  • 4 tsp. ground cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. vanilla
Instructions
  1. Preheat your oven to 350 degrees.

  2. Mix milk, sugar, eggs, cinnamon and vanilla in a large bowl until well blended.

  3. Stir in remaining ingredients and set aside for 5 minutes.

  4. Pour into a 9×9 greased baking dish. Bake at 350 degrees for 45 minutes, or until toothpick inserted into the center comes out clean.
