Peanut Butter Fudge

Ingredients
  • 2 cups Dixie Crystals granulated sugar
  • 3 Tbsp. butter
  • 1 cup evaporated milk
  • 1 cup miniature marshmallows
  • 12 oz. jar crunchy peanut butter
  • 1 tsp. vanilla
Instructions
  1. Place the sugar, butter and evaporated milk into a heavy saucepan.

  2. Heat on medium high heat until boiling, stirring constantly. Let boil for 5 minutes, stirring constantly. You may need to turn the heat down if it starts to overcook.

  3. Remove from heat and add marshmallows, peanut butter and vanilla. Stir until well blended.

  4. Pour into a 9" square pan and cool. Cut into squares before serving.

Ingredients
  • 1/2 cup cocoa
  • 2/3 cup milk, scalded
  • 2 cups sugar
  • 1 Tbsp. corn syrup
  • 2 Tbsp. butter
  • 1 tsp. vanilla
  • 4 Tbsp. peanut butter
Instructions
  1. Melt chocolate in milk.

  2. Add sugar and corn syrup. Cook slowly, stirring until sugar dissolves.

  3. Bring to boiling. Cover and cook for 3 minutes.

  4. Uncover and cook until soft ball forms, stirring frequently.

  5. Remove from heat. Add butter and cool until lukewarm without stirring.

  6. Add vanilla and peanut butter and beat vigourously until very thick and no longer glossy.

  7. Quickly spread into greased pan.

  8. Chopped nuts can be sprinkled on top if preferred. Makes 2 dozen pieces.
