Ingredients
  • 1 lb ground beef
  • 1/2 cup onion, finely chopped
  • 1/2 tsp minced garlic
  • 2 cups water (separated)
  • 1 packet taco seasoning
  • 2 cups elbow macaroni (10 ounces)
  • 1 1/2 cups shredded taco cheese
Instructions
  1. In a large skillet, brown the ground beef completely.

  2. Drain any fat and add in the onion and garlic. Stir about 30 seconds to a minute on medium-high heat.

  3. Add in one cup of water, and taco seasoning. Stir well and then add in the pasta.

  4. Bring to a boil and then lower to low-medium heat and cover the skillet with a lid.

  5. Simmer for about 5-7 minutes and then add in the last cup of water, stirring occasionally. Return the lid and simmer until pasta is tender (about another 5-7 minutes), stirring occasionally.

  6. Remove from heat and sprinkle cheese over the top. Let melt and serve immediately.

Ingredients
  • 6 boneless pork chops
  • 3 Tbsp olive oil
  • 1/2 cup parmesan cheese
  • 1/2 cup Italian seasoned breadcrumbs
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
Instructions
  1. In a bowl combine the parmesan cheese, breadcrumbs, pepper and garlic powder.

  2. Pour the olive oil into another bowl. Rub the pork chops in olive oil and then coat each one in the cheese mixture. Press the mixture over the pork chops to make sure they are well covered in it.

  3. Line a pan with aluminum foil and spray with cooking spray.

  4. Place the pork chops on the pan and bake at 350 degrees for 35 minutes.

I'm always looking for ways to use my clay cooker. The meat always comes out so tender, as it does with this recipe.

Ingredients
  • 2 1/2 lb pork loin roast
  • 1 small onion, thinly sliced
  • 1 Tbsp Italian seasoning
  • 1/8 tsp cayenne powder
  • 1 can beef broth (14 1/2 ounce)
  • 1/8 tsp pepper
  • 8 small red potatoes, quartered (optional)
  • 2 Tbsp cornstarch
Instructions
  1. Soak clay cooker lid for 10 minutes.

  2. Make five horizontal cuts down center of roast. Stuff each cut with a slice of onion, reserving remaining onion.

  3. Place the roast in the clay cooker. Mix all the seasonings and sprinkle over the top of the roast.

  4. Pour broth around roast.

  5. Place remaining onion slices, pepper,  and potatoes around roast.

  6. Put the lid on and place the roast into a cold oven. Heat the oven to 325 degrees and cook for 2 hours and then check meat internal temperature. You may need to add 30 minutes.

  7. If you want a sauce for your meat, bring pan juices to boil. Boil 10-12 minutes or until reduced by half. In a small bowl combine 1/2 cup water and 2 Tbsp. of cornstarch. Blend till smooth. Add pan juices. Cook, stirring till mix is bubbly and thick.

Clay Cooker Pot Roast

Do you have a clay cooker, but never knew what to cook in it? Pot roast cooks great in clay cookers and comes out exceptionally moist. This is a super easy to cook recipe, just make sure to plan ahead so you have enough cooking time.

Ingredients
  • 3 lb roast
  • 2 cans cream of mushroom soup
  • 1 packet Lipton dry soup mix (choose your favorite beef flavor)
  • 2-4 Tbsp cornstarch (to thicken gravy)
Instructions
  1. Soak the lid of your clay cooker for 10 minutes.

  2. Place your roast into the bottom of the clay cooker.

  3. Mix all soup mixes in bowl and pour on top of the roast.

  4. Add enough water to cover meat, but make sure you have at least one inch of space below the top of the bottom portion of your clay cooker.

  5. Place clay cooker in cold oven and then cook for three hours at 350 degrees.

  6. To thicken your gravy, mix two Tablespoons of cornstarch with a 1/2 cup water and pour it into the gravy. Stir to mix. You can repeat this one more time if you would prefer thicker gravy. I would not recommend doing this more than two times, as it can distort the flavor of the gravy.

Here's a fancy recipe. It takes a while to prepare, but it is well worth it. It's one of my husband's favorites. My husband and I like to work on this one together. I prefer serving this dish with carrots and mashed potatoes.

Ingredients
  • 4-5 slices of bacon
  • 1 small onion
  • 1 apple peeled, cored and diced (whatever variety you prefer, I like Jonagold and Gala)
  • 2 Tbsp olive oil
  • 4 large chicken breasts
  • 2 (10.75 oz) cans of cream of chicken soup
  • 1/4 cup chicken broth
  • 2/3 cup grated sharp white cheddar cheese
  • salt and pepper (to taste)
Instructions
  1. Grate your cheese.

  2. Peel, core and dice your apple.

  3. Preheat the oven to 350 degrees.

  4. Pan cook the bacon and transfer the bacon to paper towels to drain. Leave the grease in the pan.

  5. Season the chicken breasts well with salt and pepper.

  6. Cook the chicken in the bacon drippings for a minute or two, or until lightly browned on each side. Transfer to a lightly sprayed large casserole dish.

  7. Add vegetable oil to the pan and saute the onions for about three minutes.

  8. Add your apple to the onions and saute over medium heat for three to four minutes.

  9. Season lightly with salt and pepper. Crumble your bacon and add it to the pan.

  10. Add the broth and soup, stirring to combine.

  11. Add the cheese and stir.

  12. Pour the sauce over the chicken breast and bake for 30 minutes.

Ingredients
  • 4 chicken breasts (boneless, skinless)
  • 1 egg
  • 4 slices swiss cheese
  • 4 slices ham
  • 1/2 cup flour
  • 1/2 cup bread crumbs
  • 1 Tbsp vegetable oil
  • 8-12 toothpicks
Instructions
  1. Soak toothpicks for 20 minutes.

  2. Cut the fat off of the chicken.

  3. Cut a pocket in the middle of each piece of chicken.

  4. Add one slice each of ham and cheese into each chicken pocket. If you are using deli sliced ham and cheese, you can use two slices of each in each chicken pocket.

  5. Push the pockets down as hard as you can so nothing falls out. Push toothpicks into chicken to help hold the ham and cheese inside.

  6. Crack one egg into a bowl and beat it.

  7. Cover each chicken breast in flour.

  8. Dip the chicken into the egg and make sure it is completely coated.

  9. Completely coat the egg covered chicken in bread crumbs.

  10. Add vegetable oil to a pan and heat the pan.

  11. Put the chicken into pan and keep moving it around so it won't stick.

  12. Brown the outside of the chicken.

  13. Put the chicken into the oven at 400 degrees for 20 minutes. Remove toothpicks and serve.

Ingredients
  • 5-6 frozen chicken breasts
  • 18 oz favorite barbecue sauce
  • 15 oz can of pineapple chunks (with the syrup)
  • 1 onion
Instructions
  1. Place frozen chicken in the bottom of the crock pot.

  2. Cover the chicken entirely with barbecue sauce.

  3. Chop onion into chunks.

  4. Add the pineapple with its juice and the chopped onion on top of the barbecue sauce.

  5. Cook on high for 4 hours, or on low for 6 hours.

  6. Shred the meat with two forks and serve in a taco or over rice.
