Maryland Crab Soup

Ingredients
  • 1 lb. Maryland regular crab meat
  • 1/2 lb. Maryland claw crab meat
  • 1 lb. beef shin, bone-in
  • 3 qts. water
  • 1 Tbsp. salt
  • 1/4 tsp. black pepper
  • 1 tsp. Old Bay seasoning
  • 10 oz. pkg. frozen mixed vegetables (can substitute fresh)
  • 1 pkg. frozen mixed soup vegetables (can substitute fresh)
Instructions
  1. Put your beef shin, water, salt, pepper, and Old Bay seasoning in a large pot and simmer covered until meat is very tender, for about 3 hours.

  2. Cool and place in refrigerator until fat skims on top.

  3. Skim fat off of the top.

  4. Add the remaining ingredients and simmer covered until the vegetables are done, about 45 minutes.

  5. If your soup isn't your desired thickness, you can mix together 1 Tbsp. flour with 1/4 cup of water in a shaker and mix it into the soup. Makes 5 quarts.

Here's a great way to use that leftover rotisserie chicken that's quick and easy. This was one of my daughter's favorite recipes when she was growing up. Tastes great served with rice. I hope you enjoy it as much as we did.

  • 16 oz. precooked chicken
  • 2 cans cream of mushroom soup
  • 1/2 bag onion (4-5 oz. when halved)
  • 1/2 bag green pepper (4-5 oz. when halved)
  • 5 oz. can. pimento cheese
  • 2 cans mushrooms (4 oz. cans)
  • 1/2 can chicken broth (7 – 7.5 oz when halved)
Instructions
  1. Saute onion and green pepper in large skillet.

  2. Shred chicken and add to onion and pepper.

  3. Add remaining ingredients and mix. Heat until cooked through, for about 2 – 3 minutes.

  4. Serve over rice or noodles.

  • 16 oz. Tennessee Pride mild sausage
  • 16 oz. whipped cream cheese
  • 1 can Rotel
Instructions
  1. Cook sausage in skillet until done. Then drain.

  2. Mix in the cream cheese and Rotel. Serve hot with chips.

We eat a lot of chicken in our house, mostly because it's inexpensive. So it's important to us to have a lot of variety in our chicken recipes so we don't get tired of it. My husband was really craving barbecue pulled chicken. I've done pulled pork before, but not chicken. I gave it a try and we both loved the results. Hope you all do too.

  • 3 – 3.5 lbs. boneless, skinless chicken breasts
  • 1 1/2 cups barbecue sauce (I prefer Sweet Baby Ray's)
  • 1/2 tsp. onion powder
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. garlic powder
  • 1 Tbsp. olive oil
  • 1 Tbsp. Worcester sauce
  • 1/4 cup brown sugar
Instructions
  1. Cut excess fat off of chicken.

  2. Pour your barbecue sauce, Worcester sauce and olive oil in the bottom of the crockpot.

  3. Then add the onion powder, garlic powder, smoked paprika and brown sugar and mix.

  4. Place your chicken breasts into the crockpot one at a time, flipping in the sauce as you place them in a single layer.

  5. Cover and cook on low for 6-7 hours or high for 3-4 hours.

Bourbon Chicken (without the Bourbon)

Like bourbon chicken, but don't want the alcohol. Then this recipe's for you. You get the same great taste, but without the alcohol.

Ingredients
  • 5 boneless, skinless chicken breasts (or 12-15 chicken tenders)
  • 2 Tbsp. olive oil
  • 1 tsp. garlic powder
  • 1/4 cup apple or pineapple juice
  • 1/3 cup brown sugar
  • 2 Tbsp. ketchup
  • 1 Tbsp. apple cider vinegar (or 3 Tbsp. chicken broth)
  • 1/2 cup water
  • 1/3 cup soy sauce
  • pinch red pepper flakes
  • 1 Tbsp. cornstarch
Instructions
  1. Cut your chicken into small 1-2 inch pieces.

  2. Heat a large skillet over medium high heat. Once it is hot pour 2 Tbsp. olive oil into the skillet.

  3. Add your chicken pieces to the pan and cook for about 10 minutes, stirring occasionally.

  4. The chicken will start to get juicy and bubbly. Drain juices and continue cooking in the skillet over medium high heat.

  5. In a medium size mixing bowl, combine garlic powder, apple (or pineapple) juice, brown sugar, ketchup, apple cider vinegar (or chicken broth), water, soy sauce, red pepper flakes and cornstarch. Wisk until cornstarch is dissolved and all ingredients are well combined.

  6. When your chicken has a nice brown sear on most pieces, add your sauce and stir, covering all pieces.

  7. Reduce the heat to a low simmer and cover, tilting the lid slightly to let air escape.

  8. Simmer for about 20 minutes, stirring a couple of times.

  9. If the sauce is too thick, add a Tbsp. of chicken broth and stir well.

  10. Serve over white or brown rice.

Spicy Air Fryer Pork Chops

Spicy Air Fryer Pork Chops

These pork chops have a little bit of a kick to them. Super easy to cook in the air fryer. Recipe calls for 1/2 – 3/4 inch boneless pork chops, but if you have thicker boneless pork chops (1 1/2 – 2 inch) you can cook them for 10-12 minutes on each side at 400 degrees.

  • 1 Tbsp paprika

  • 1 1/2 tsp pepper
  • 1 tsp ground mustard
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1-2 Tbsp olive oil
Instructions
  1. Preheat the air fryer to 380 degrees.

  2. Mix all dry ingredients in medium sized bowl.

  3. Coat each pork chop with olive oil and then cover both sides with dry ingredients.

  4. Place 4 pork chops in the air fryer basket and cook for 6 minutes on each side. Do not layer pork chops. If only 2 fit in your basket, cook the first two completely and then repeat for the second two.

  5. Check internal temperature, should be at least 145 degrees. Transfer to cutting board and let rest for 5 minutes.

Here’s a super easy, but great tasting recipe that is perfect for those family 4th of July gatherings. You can also substitute any pie filling to fit your taste including cherry or blueberry.

  • 2 cans apple pie filling (can use cherry or blueberry or any other pie filling flavor)
  • 1/2 box box yellow cake mix
  • 1/2 cup melted butter
  • 3/4 tsp cinnamon
Instructions
  1. Preheat the oven to 350°F.

  2. Spray a 9×13 pan with cooking spray.

  3. Mix apple pie filling and cinnamon and pour into the pan. Spread it evenly.

  4. Sprinkle cake mix on top and smooth evenly.

  5. Pour your melted butter over the top. Swirl it into the cake mix with a knife.

  6. Bake for 35 to 40 minutes.

  7. Cool on a baking rack.

  8. Serve with vanilla ice cream or whipped cream on top. (optional)
