Here's a great way to use that leftover rotisserie chicken that's quick and easy. This was one of my daughter's favorite recipes when she was growing up. Tastes great served with rice. I hope you enjoy it as much as we did.
Saute onion and green pepper in large skillet.
Shred chicken and add to onion and pepper.
Add remaining ingredients and mix. Heat until cooked through, for about 2 - 3 minutes.
Serve over rice or noodles.
