Classic Pecan Pie

Ingredients
  • 1 cup light or dark corn syrup
  • 3 eggs
  • 1 cup sugar
  • 2 Tbsp. butter, melted
  • 1 tsp. vanilla extract
  • 1 1/2 cups pecans (you can use a 6 oz. bag)
  • 1 unbaked or frozen 9" deep dish pie crust
Instructions
  1. Preheat oven to 350 degrees. If using a frozen pie crust, place a cookie sheet in the oven while the oven is preheating.

  2. Mix corn syrup, eggs, sugar, butter and vanilla using a spoon.

  3. Stir in pecans.

  4. Place pie crust into pie pan. For easy cleaning spray your pie pan with cooking spray before placing pie crust into the pan.

  5. Pour filling into pie crust. Place pie crust on cookie sheet (if frozen use your preheated cookie sheet).

  6. Bake on the center rack of the oven for 60-70 minutes. If your crust is over browning while cooking, cover the edges with foil. The pie is done when the center reaches 200 degrees. Tap the center of the pie lightly. It should spring back when done.

  7. High altitude adjustments: Reduce sugar to 2/3 cup and increase butter to 3 Tbsp. Reduce oven temperature to 325 degrees.

Savory Pot Roast

This recipe is almost identical to our Clay Pot Roast recipe, however this recipe uses a dutch oven.

Ingredients
  • 3-3.5 lb. boneless pot roast
  • 1 packet Lipton dry soup mix (choose your favorite beef flavor)
  • 2 cups water
  • 1 can cream of mushroom soup
  • flour (to thicken)
Instructions
  1. In your dutch oven, brown your roast.

  2. Add soup mix, soup and water.

  3. Simmer covered for 2 1/2 hours (until the meat is tender), turning occasionally.

  4. Blend about 1/4 cup water with 2 1/2 Tbsp. flour and stir into the gravy.

  5. Bring to a boil, then simmer, stirring constantly until thickened (about 5 minutes).

Ingredients
  • 4 medium apples (peeled, cored, and thinly sliced)
Sauce
  • 1/2 cup brown sugar, packed
  • 1/2 tsp cinnamon
  • 1/4 cup water
Crumble
  • 1/2 cup flour
  • 1/2 cup oats
  • 1/2 cup brown sugar, packed
  • 1/2 cup softened butter (do not melt)
  • 1/2 tsp cinnamon
Instructions
  1. Preheat your oven to 375 degrees.

  2. Spray a 8×8 glass 8×8 dish with cooking spray.

  3. Peel and core your apples. Cut them into thin slices. Place them on the bottom of your glass dish, spreading evenly.

  4. Make your sauce by combining 1/2 cup packed brown sugar, 1/2 tsp. cinnamon, and 1/4 cup water. Pour sauce over apples.

  5. Now you make your crumble. Mix 1/2 tsp. cinnamon, 1/2 cup flour, 1/2 cup oats, 1/2 cup packed brown sugar, and 1/2 cup softened butter (do not melt). Use a pastry blender or a fork to mix until crumbly. Sprinkle over the top of the apple mixture.

  6. Sprinkle a little cinnamon over the top and bake at 375 degrees for 30-40 minutes, until the apples are tender.

  7. Let cool for 10 minutes and serve with ice cream or whipped cream. You can also drizzle caramel ice cream syrup topping over the top.

Chicken Paprika

Ingredients
  • 4 lbs. chicken pieces
  • 4 Tbsp. shortening
  • 1 can cream of chicken soup (I prefer Campbell's)
  • 1 jar Heinz chicken gravy
  • 2 Tbsp. lemon juice
  • 1 tsp. paprika
Instructions
  1. In two skillets, brown chicken with 2 Tbsp. shortening for each pan.

  2. Pour off the fat.

  3. Mix all of your remaining ingredients in a bowl. Pour half into each of the skillets.

  4. Cover and cook on low for 45 minutes or until done, stirring occasionally.

  5. Remove chicken and thicken the gravy.

Swedish Meatballs

  • 1 bag pre-cooked homestyle meatballs (approximately 11 oz.)
  • 1 Tbsp. butter
  • 14 oz. can beef broth soup (can use Campbell"s or Walmart, I prefer Walmart’s beef broth with onion.)
  • 1 Tbsp. Worcestershire sauce
  • 1/4 cup sour cream
  • 1 small can of mushrooms with pieces
  • 8 oz. package of egg noodles, cooked
  • pinch garlic powder
Instructions
  1. Bring to a boil the water for your noodles. Add noodles when the water boils. Cook noodles as instructed on package.

  2. Warm the frozen meatballs in the microwave for about 2-3 minutes on high, cooking half a bag at a time.

  3. In large sauce pan with a lid, or a covered skillet, place your butter with a sprinkle of garlic and add drained mushrooms, salt, and pepper. Stir and warm until butter is melted.

  4. Whisk in Worcestershire sauce, broth, and sour cream until well blended. Bring to a boil.

  5. Add your meatballs and cover. I cook over a medium to medium high heat, stirring often four about 10 minutes.

  6. If your gravy is too soupy, you can use 2 Tbsp. cornstarch, mixed in 1/4 cup of cold water. (Although I’ve not had that problem.)

  7. Meanwhile your noodles should finish cooking about the same time. (Times on the meatballs are very forgiving, that’s why I pre-warmed them in the first place.)

  8. Serve meatballs over your noodles.

Million Dollar Pie

This is a favorite at family functions and always disappears within 5 minutes. We sometimes call it Millionaire Pie as well. There's only 6 ingredients so it's very easy, as well as delicious.

Ingredients
  • 1 pie shell
  • 1 can condensed milk
  • 2 1/2 Tbsp. lemon juice
  • 8 oz. cool whip
  • 1 small can crushed pineapple, drained
  • 1 cup pecans, chopped
Instructions
  1. Combine milk and lemon juice. Stir until thick.

  2. Add cool whip, pineapple and pecans and stir.

  3. Pour mixture into baked pie shell.

  4. Chill.

Mexican Macaroni

  • 2 boxes Velveeta shell macaroni and cheese
  • 2 packages taco seasoning
  • 16 oz. sour cream
  • 2 lbs. ground beef
  • 8 oz. shredded cheese
Instructions
  1. Preheat your oven to 350 degrees.

  2. Make Velveeta macaroni and cheese according to package.

  3. Add your sour cream when mixing in the package's cheese sauce.

  4. While the macaroni and cheese is cooking, brown your ground beef.

  5. Add the taco seasoning to the ground beef and cook according to the package.

  6. In 9×13 cooking dish place one layer of macaroni (half) on the bottom, one layer of all your ground beef and then a second layer of the remaining macaroni.

  7. Cover the top completely with shredded cheese.

  8. Cover dish with foil and bake for 30 minutes.

We made these for Mother's Day this year for something special during the pandemic. They came out wonderful and everyone enjoyed them. They were a hit with our family as I'm sure they will be with yours.

Ingredients
  • 4 potatoes, washed
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. rosemary
  • 1 1/2 tsp. pepper
  • 1/3 cup olive oil
  • 1/4 stick of butter melted
  • shredded cheese (optional)
  • sliced ham (optional) – can use bacon bits as well
Instructions
  1. Preheat oven to 350 degrees.

  2. Wash potatoes.

  3. Melt your butter in microwave safe bowl. Add rosemary, salt, and pepper and mix.

  4. Cut your potatoes most of the way through. Leave about a quarter inch.

  5. Brush half of the butter mixture over the cut potatoes including the sides.

  6. Cook for 1 hour 20 minutes at 350 degrees.

  7. Pull out potatoes and brush last half of mixture over potatoes.

  8. Add shredded cheddar cheese and ham or bacon bits in between the cut slices of potatoes. (Optional)

  9. Cook for 10 more minutes.
