Ingredients
  • 2 lbs. boneless chicken breasts
  • 2 cans cream of chicken soup
  • 1 package McCormick or similar brand chicken gravy mix
  • 2 1/2 cups water
  • 3/4 cup flour
  • 1/8 tsp. poultry seasoning
  • 1 Tbsp. cornstarch (with 1/4 cup water) - to thicken gravy
  • 1 large cooking bag
Instructions
  1. Preheat oven to 350 degrees.

  2. Mix soup, gravy mix, water and flour in a bowl until smooth.

  3. Add chicken and mixture to the cooking bag.

  4. Cook at 350 for 45 minutes for boneless chicken or 1 hour 15 minutes for bone-in pieces, or until done.

  5. Mix cornstarch and water in a bowl until smooth. Once chicken is done pour cornstarch mixture into the sauce and stir until smooth and proper consistency.

This is another family favorite, especially around the holidays. We typically double this recipe for large family functions.

Ingredients
  • 1 can sliced pineapple (very well drained)
  • 1 #2 can sweet potatoes, drained (1 lb. 4 oz.)
  • 1 cup sugar
  • 1 tsp. vanilla extract
  • 1 egg
  • 1/2 stick butter
  • 1 dash cinnamon
  • miniature marshmallows
  • 1/2 cup chopped pecans (optional)
Instructions
  1. Mash sweet potatoes in a large bowl until smooth.

  2. Add sugar, vanilla, melted butter, cinnamon, egg and pecans and mix well.

  3. Arrange pineapple rings in a baking dish and cover rings with mounds of sweet potato mixture.

  4. Bake 20-25 minutes in 350 degree oven.

  5. Remove from oven and cover sweet potatoes with marshmallows and bake another 5 minutes.

Ingredients
  • 2 cans cherry pie filling
  • 1 can pitted dark sweet cherries, drained
  • 1 1/2 cups Bisquick/Jiffy Mix
  • 1/2 cup sugar
  • 1 tsp. cinnamon
  • 1/2 cup cold butter, cut in pieces
  • 1 cup chopped pecans/walnuts
Instructions
  1. Mix pie filling and cherries in ungreased 9x13 baking dish. Spread evenly over bottom of dish.

  2. In a medium sized bowl mix Bisquick/Jiffy Mix, cinnamon and sugar.

  3. Cut in butter using pastry blender or two knives until mixture is crumbly (pea sized). Use fingers to finish mixing.

  4. Sprinkle everything over cherry mix.

  5. Bake at 375 degrees for 45 minutes.

  6. Serve hot with ice cream.

Here's a recipe for a sweet (almost cake like), moist cornbread that is always a winner. Recipe can be easily doubled for a large family function.

Ingredients
  • 1 box Jiffy cornbread mix
  • 1 8 oz. sour cream
  • 2 eggs
  • 1 stick melted butter
  • 10 oz. frozen creamed corn (Green Giant preferable)
  • butter to coat the dish
Instructions
  1. Butter an 8 inch square baking dish.

  2. Preheat oven to 350 degrees.

  3. Mix all the ingredients except the corn. When well blended, stir in the corn and mix well.

  4. Pour into the pan.

  5. Bake for 45 minutes or until golden brown.

  • 1 1/2 - 2 lbs. boneless pork chops
  • 1 Tbsp. barbecue rub (just use your favorite, I prefer Applewood)
  • 2 Tbsp. olive oil
  • 1/2 cup barbecue sauce (just use your favorite, I prefer Hickory Smoke)
  • cooking spray
Instructions
  1. Preheat the oven to 350 degrees.

  2. Spray the bottom of your baking dish with cooking spray.

  3. Place your olive oil in a bowl and rub the pork chops in olive oil and then cover them with the barbecue rub.

  4. Place the pork chops in the baking dish and cover with foil. Cook for 25 minutes.

  5. Remove from the oven and cover the pork chops with barbecue sauce. Leave the baking dish uncovered and return to the oven. Cook for an additional 15 minutes.

Our family uses these meatballs for a main course, served with rice, however they also work well for appetizers.

Ingredients
  • 2 bags 14 oz. frozen original meatballs (not Italian style)
  • 2 jars chili sauce
  • 1 cup grape jelly
  • 1 Tbsp. brown mustard
Instructions
  1. Heat frozen meatballs according to package instructions.

  2. Place meatballs in crockpot.

  3. Add all other ingredients and mix together.

  4. Cook in crockpot for 3 hours on high or 6 hours on low.

Ingredients
  • 1 - 1 1/2 lbs. ground beef
  • 1 small onion diced
  • 1 can cream of mushroom soup
  • 1/4 cup bread crumbs
Instructions
  1. Mix ground beef, onion, bread crumbs, and 1/3rd of the cream of mushroom soup.

  2. Make into 4-6 paddies.

  3. Put in glass baking dish and bake at 350 degrees for 30 minutes.

  4. Drain off any fat.

  5. Mix remaining soup with soup can of water and pour over the top of all the paddies. Bake an additional 10 minutes.

Ingredients
  • 1 1/2 lb ground beef
  • 1 large onion
  • 1 medium green pepper
  • 1 tsp salt
  • 3 beef bouillon cubes (or 3 Tbsp instant bouillon)
  • 1/2 tsp dry mustard
  • 1 cup Uncle Ben's Rice
  • 2 1/2 cups water
  • 1 cup cheddar or monterey jack cheese
  • 1 medium tomato, chopped
Instructions
  1. Chop up your onion and green pepper.

  2. Brown beef with onion and green pepper in large skillet. Drain excess fat and return to skillet.

  3. Stir in salt, bouillon, dry mustard, rice and water. Bring to boil.

  4. Reduce heat, cover and cook until liquid is absorbed, about 25 minutes.

  5. Stir in tomato. Sprinkle cheese over top. Cover and remove from heat.

Ingredients
  • 1 lb ground beef
  • 1/2 cup onion, finely chopped
  • 1/2 tsp minced garlic
  • 2 cups water (separated)
  • 1 packet taco seasoning
  • 2 cups elbow macaroni (10 ounces)
  • 1 1/2 cups shredded taco cheese
Instructions
  1. In a large skillet, brown the ground beef completely.

  2. Drain any fat and add in the onion and garlic. Stir about 30 seconds to a minute on medium-high heat.

  3. Add in one cup of water, and taco seasoning. Stir well and then add in the pasta.

  4. Bring to a boil and then lower to low-medium heat and cover the skillet with a lid.

  5. Simmer for about 5-7 minutes and then add in the last cup of water, stirring occasionally. Return the lid and simmer until pasta is tender (about another 5-7 minutes), stirring occasionally.

  6. Remove from heat and sprinkle cheese over the top. Let melt and serve immediately.

  • 6 boneless pork chops
  • 3 Tbsp olive oil
  • 1/2 cup parmesan cheese
  • 1/2 cup Italian seasoned breadcrumbs
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
Instructions
  1. In a bowl combine the parmesan cheese, breadcrumbs, pepper and garlic powder.

  2. Pour the olive oil into another bowl. Rub the pork chops in olive oil and then coat each one in the cheese mixture. Press the mixture over the pork chops to make sure they are well covered in it.

  3. Line a pan with aluminum foil and spray with cooking spray.

  4. Place the pork chops on the pan and bake at 350 degrees for 35 minutes.
