This chicken is super easy to make and tastes delicious. It comes out nice and juicy. The recipe is flexible to allow for your preferences. You can modify the smoker wood chips, dry rub and barbecue sauce to suit your taste.

Ingredients
  • 4 boneless, skinless chicken breasts
  • 1-2 Tbsp chicken seasoning, season to taste (we used an applewood rub)
  • barbecue sauce (spread over the tops of the chicken breasts) – optional
  • 2 Tbsp olive oil
  • smoker wood chips (fruit flavored or oak)
Instructions
  1. Preheat your smoker to 225 degrees F.

  2. Soak your wood chips. We used apple, but you can use oak or cherry if you prefer.

  3. Cut any excess fat off of your chicken and drizzle with olive oil.

  4. Sprinkle with your favorite dry rub. We used an applewood rub.

  5. Smoke the chicken for approximately 1 hour or until the internal temperature reaches 160 degrees F.

  6. Remove the chicken from the smoker.

  7. Cover your chicken breasts with your favorite barbecue sauce. (optional)

  8. Tent the pan with foil and allow the temperature to increase to 165 degrees F.

Ingredients
  • 1 lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/2 tsp parsley flakes
  • 1/2 tsp salt
Instructions
  1. Cut your chicken breasts into nugget sized pieces.

  2. Coat the chicken in the olive oil.

  3. Mix your spices together in a separate bowl, then add to the chicken. Stir to evenly coat the chicken in the seasoning.

  4. Place the seasoned chicken into an air fryer basket. Air fry for 10-12 minutes at 400ºF until the chicken nuggets reach an internal temperature of 165ºF.

Swedish Turkey Meatballs

I was looking for something to cook, but I wanted to add a new dish to our dining options. I had some ground turkey, so I decided to make Swedish meatballs. Now most Swedish meatballs recipes call for sour cream so, having a sour cream allergy, I came up with this recipe. It was a hit with my husband and the inlaws – always a plus in my book.

Note: While many recipes allow you to substitute half and half for heavy cream, this recipe produces a thinner sauce if you use half and half.

Ingredients
Meatballs
  • 1 1/2 lbs ground turkey
  • 3/4 cup bread crumbs
  • 1 egg, beaten
  • 2 Tbsp grated Parmesan cheese
  • 1 tsp garlic salt
  • 2 tsp dried Italian seasoning
Sauce
  • 2 cups beef broth
  • 3 Tbsp all-purpose flour
  • 2 Tbsp butter
  • 1 cup heavy cream
  • 1 Tbsp Worcestershire sauce
  • 1/4 tsp ground black pepper
Instructions
  1. Mix the ground turkey, bread crumbs, egg, Parmesan cheese, garlic salt, and Italian seasoning by hand in a large bowl. Form the mixture into 1 1/2-inch meatballs.

  2. Cover a tray with foil and spray lightly with non-stick cooking spray. Place your meatballs on the tray and cook in the oven on 350 degrees for 25 – 30 minutes.

  3. Pour your beef broth in a microwave-safe container and microwave on high until hot, which is about 2 minutes depending on your microwave. Whisk the flour into your beef broth until smooth.

  4. Melt the butter in a large skillet over medium heat.

  5. Once the butter is melted, reduce the heat to low. Pour in the beef broth slowly over the meatballs. Stir in the heavy cream, Worcestershire sauce, and black pepper.

  6. Cook your sauce for about 10 minutes, stirring frequently.

  7. Check your meatballs and add to the sauce. Spoon the sauce until it completely covers the meatballs.

  8. Serve with egg noddles, rice or mashed potatoes.

Shrimp Scampi

  • 2 lbs. jumbo shrimp
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup butter, melted
  • 1/2 tsp. tarragon
  • 2 Tbsp. fresh lemon juice
  • 1/2 tsp. steak sauce
  • 2 Tbsp. fresh parsley, chopped
  • 1 lb. hot freshly cooked fettucine
Instructions
  1. Peel and de-vein shrimp.

  2. Cook your onion and garlic in butter, stirring constantly for 3-4 minutes.

  3. Add tarragon and next four ingredients and bring to boil.

  4. Add shrimp. Cook 5-6 minutes until shrimp turns pink.

  5. Serve with fettucine and sprinkle parsley over the top.

  • 1 1/2 lbs. shrimp (whole, cooked, peeled)
  • 1/2 cup margarine
  • 1 cup celery, diced
  • 2/3 cup onions, chopped
  • 1/2 cup green pepper, chopped
  • 1 cup water
  • 6 oz. canned tomato paste
  • 1 Tbsp. parsley flakes
  • 1 tsp. salt
  • 4-5 drops Tabasco hot sauce
Instructions
  1. Cook the celery and onions in margarine until onions turn transparent.

  2. Add all remaining ingredients EXCEPT the shrimp and let simmer for 30 minutes.

  3. Add whole, cooked and peeled shrimp and stir.

  4. Simmer an additional 10 minutes. Serve over white rice.

Corned Beef Casserole

  • 1 10 oz. package egg noodles (cooked and drained)
  • 1 can corned beef
  • 1 can cream of chicken soup
  • 1 cup cheese (diced)
  • 1/2 cup celery
  • 1/2 tsp. onion (flakes or french minced onion)
  • 1 cup milk
  • 1 small bag regular potato chips
Instructions
  1. Cook your noodles.

  2. Heat the soup and milk.

  3. Drain noodles and add to the soup and milk.

  4. Mix in the remaining ingredients.

  5. Pour into a greased casserole dish and crumble potato chips on top.

  6. Bake at 350 degrees for 1 hour.

Veal Cutlets Parmesan

Ingredients
  • 2 lbs. thin sliced veal cutlets
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/2 cup bread crumbs
  • 1/2 cup parmesan cheese
  • 1 egg
  • 2 Tbsp. cold water
  • 3 Tbsp. fat
Instructions
  1. Remove outer skin and pound cutlets very thin.

  2. Roll in crumbs and cheese.

  3. Dip in egg, beaten in cold water.

  4. Roll again in crumb mixture.

  5. Sprinkle a little flour in hot fat to prevent sticking of your breading.

  6. Cook cutlets until brown on both sides.

Eggplant Parmesan

Ingredients
  • 1-2 eggplants
  • 2 Tbsp. milk (add more as needed)
  • 1 egg
  • cooking oil
  • 1/2 cup flour (add more as needed)
  • 1/2 cup grated Parmesan or Romano cheese (add more if needed)
  • 1 package mozzarella cheese slices
  • 1 jar Progresso meat sauce
Instructions
  1. Cut off stem and bottom of eggplant. Peel off any tough or bruised skin (leave the rest of the skin intact).

  2. Wash eggplant in cold water.

  3. Slice into 1/4 inch thick slices. Cut out any dark or brown spots in the eggplant meat.

  4. Scramble egg in one bowl. Place milk in another bowl and flour on another bowl.

  5. Dip your eggplant slices first in the milk, then the egg and dredge in flour.

  6. Fry in oil at 325 degrees. Drain excess oil.

  7. Make up to three layers of eggplant.

  8. Top each layer with grated Parmesan or Romano cheese.

  9. On top of the grated cheese place one slice of mozzarella on each stack.

  10. Add spaghetti sauce only on top layer.

  11. Cover dish and bake in 350 degree oven for about 35 minutes, until heated through and cheese is melted.

  • 3 cups cheddar cheese
  • 1 onion
  • 2 tomatoes
  • 2 cans tomato sauce
  • 20 flour tortillas
  • lettuce
  • 1 1/2 lbs. ground beef
  • 1 French's taco sauce
  • 1 can Pace Picante sauce
  • 1 green pepper
  • 2-3 chopped green chili peppers
Instructions
  1. Mix the tomato sauce and the taco sauce in saucepan.

  2. Cook on the stove top on low (setting 2 on the knob).

  3. Chop your green pepper and add to saucepan. Stir. Cook on medium (setting 4-5 on knob).

  4. Chop your onion and add to ground beef.

  5. In a skillet brown your ground beef and drain. Pour contents of the saucepan into the skillet and stir.

  6. Chop up chili peppers and add to skillet. Stir and then turn down to a simmer.

  7. Clean lettuce and tomatoes.

  8. Remove meat mixture from heat.

  9. Add meat mixture, tomato, lettuce and shredded cheese to tortilla. Fold into burritos.

  10. Serve with Pace Picante sauce.

I've done this recipe before with frozen mesquite chicken breasts, however I haven't been able to find them recently so I developed this recipe using fresh chicken breasts and liked the result even better. This pairs well with our cinnamon apples, check out our recipe for these on our website. We made it for company last night and they loved it. We hope you like it too.

Ingredients
  • 4-6 boneless, skinless chicken breasts
  • 1 pack McCormick Grill Mates Mesquite Marinade (1.06 oz)
  • 4-6 pieces bacon (one for each chicken breast)
  • 6 oz. barbecue sauce (I used Sweet Baby Ray's Hickory and Brown Sugar)
  • 1 small onion
  • 1 small bag shredded cheddar cheese
  • butter (to saute onions)
  • olive oil (to sear chicken)
Instructions
  1. Cut excess fat off of your chicken.

  2. Make your mesquite marinade according to package instructions. Marinade for 10-15 minutes.

  3. Remove your chicken from the marinade and discard the marinade. Sear your chicken on all sides.

  4. Place chicken in baking dish and cook for 25 minutes at 350 degrees.

  5. Slice your onion and place to the side about 10-15 minutes before your chicken is ready to come out of the oven.

  6. Cook your bacon after slicing the onion. Blot excess grease off the bacon. Place to the side.

  7. Remove the chicken from the oven.

  8. Spread one thin layer of barbecue sauce over the top of each chicken breast.

  9. Sprinkle shredded cheddar cheese over the barbecue sauce.

  10. Break each bacon strip into 2-3 pieces and cover the cheese.

  11. Add another layer of barbecue sauce, this one a little thicker than the first.

  12. Add another layer of shredded cheese.

  13. Return dish to oven and cook for another 5 minutes.

  14. While your chicken is cooking saute your onions in butter.

  15. Pull your chicken out of the oven. Serve with sauteed onions over the top.
