This chicken is super easy to make and tastes delicious. It comes out nice and juicy. The recipe is flexible to allow for your preferences. You can modify the smoker wood chips, dry rub and barbecue sauce to suit your taste.

Ingredients
  • 4 boneless, skinless chicken breasts
  • 1-2 Tbsp chicken seasoning, season to taste (we used an applewood rub)
  • barbecue sauce (spread over the tops of the chicken breasts) – optional
  • 2 Tbsp olive oil
  • smoker wood chips (fruit flavored or oak)
Instructions
  1. Preheat your smoker to 225 degrees F.

  2. Soak your wood chips. We used apple, but you can use oak or cherry if you prefer.

  3. Cut any excess fat off of your chicken and drizzle with olive oil.

  4. Sprinkle with your favorite dry rub. We used an applewood rub.

  5. Smoke the chicken for approximately 1 hour or until the internal temperature reaches 160 degrees F.

  6. Remove the chicken from the smoker.

  7. Cover your chicken breasts with your favorite barbecue sauce. (optional)

  8. Tent the pan with foil and allow the temperature to increase to 165 degrees F.

Looking for a quick and easy alternative to those fast food nuggets? Here's a homemade recipe that's packed with flavor. This non-breaded alternative is healthy and tasty.

Ingredients
  • 1 lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/2 tsp parsley flakes
  • 1/2 tsp salt
Instructions
  1. Cut your chicken breasts into nugget sized pieces.

  2. Coat the chicken in the olive oil.

  3. Mix your spices together in a separate bowl, then add to the chicken. Stir to evenly coat the chicken in the seasoning.

  4. Place the seasoned chicken into an air fryer basket. Air fry for 10-12 minutes at 400ºF until the chicken nuggets reach an internal temperature of 165ºF.

This recipe includes two of my favorite things – cheese and cream. This recipe has changed over the past couple of months, improving each time. This recipe is pretty versatile, so you can add some of your favorite spices or use a different shredded cheese to change it up if you want.

Ingredients
  • 1 1/2 lbs chicken
  • 3 Tbsp olive oil
  • 1 cup heavy cream
  • 1 1/4 cup Italian cheese blend shredded cheese (can also use Mozzarella)
  • 1/2 tsp rosemary
  • 1/2 tsp garlic powder
  • 1 Tbsp smoked paprika
  • salt and pepper (to taste)
Instructions
  1. Preheat your oven to 375 degrees.

  2. Trim the excess fat off of your chicken and season with salt and pepper to taste.

  3. Pour olive oil into large skillet and heat on medium high. Brown your chicken 3-5 minutes on each side and place into a medium sized baking dish.

  4. In a saucepan add heavy cream, 1 cup of shredded cheese, butter, smoked paprika, garlic and rosemary. Cook on medium heat until melted, stirring frequently. Reserve 1/4 cup of shredded cheese to top the chicken.

  5. Pour the sauce over the chicken. Cover the chicken with the remaining shredded cheese.

  6. Cook for 25-30 minutes at 375 degrees.

Curry Chicken

Ingredients
  • 1 whole chicken, skinned, boned and cut into pieces
  • 4 potatoes, cut each into 6 pieces
  • 4 Tbsp. curry powder
  • 2 packets Goya Zazon spice
  • 4 cloves garlic, crushed
  • 1 Tbsp. oil
  • 1 onion, finely chopped
  • 4 cups water
Instructions
  1. Heat oil in large skillet and add crushed garlic. Let brown over low heat.

  2. Add chicken pieces, onion, potatoes, spices, curry powder and water. Let simmer until chicken and potatoes are cooked through.

  3. Serve over white rice.

When you get home from work late and don't have time to make our Smothered Barbecue Chicken recipe, here's a quick alternative that only takes a few minutes.

Ingredients
  • 4 pieces Member's Mark Mesquite Grilled Chicken fillets (frozen)
  • 4 pieces bacon (one for each chicken breast)
  • 6 oz. barbecue sauce (I used Sweet Baby Ray's Hickory and Brown Sugar)
  • 1 small onion
  • 1 small bag shredded cheddar cheese
  • butter (to saute onions)
Instructions
  1. Heat chicken breasts in microwave as directed on package. Get them up to room temperature, not fully hot.

  2. While the chicken is heating, cook your bacon. Set aside.

  3. Take your chicken breasts and cover with barbecue sauce.

  4. Cover the barbecue sauce with shredded cheddar cheese.

  5. Place your bacon on top of the cheese.

  6. Repeat the layer of sauce and a layer of cheese.

  7. Saute your onions in butter. Set aside.

  8. Microwave your chicken long enough to melt the cheese, typically 30 seconds to a minute.

  9. Top your chicken with your onions.

  • 1 1/2 cups plain yogurt or sour cream
  • 1/4 cup lemon juice
  • 1/2 tsp. worcestershire sauce
  • 1/2 tsp. celery seed
  • 1/2 tsp. paprika
  • 1 garlic clove, minced
  • 1/2 tsp. salt
  • 8 boneless, skinless chicken breasts
  • 2 cups dry bread crumbs
Instructions
  1. In a large bowl, combine the first 8 ingredients and mix well.

  2. Place your chicken in the mixture, turning to coat. Cover and marinade overnight in the refrigerator.

  3. Remove chicken from marinade and coat each piece with the bread crumbs.

  4. Arrange in shallow baking pan. Bake uncovered at 350 for 45 minutes, or until juices run clear.

  • 8 slices white bread
  • 2 cups cooked chicken
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup bell pepper, chopped
  • 1/2 cup mayonnaise
  • 2 eggs, slightly beaten
  • 1 1/2 cups milk
  • 4 Tbsp. margarine, melted
  • 1 can cream of mushroom soup
  • 1/2 cup cheddar cheese, grated
  • 3/4 tsp. salt
  • dash of pepper
Instructions
  1. Remove crust from bread. Arrange bread on the bottom of a 9×13 casserole dish.

  2. Combine chicken, onion, celery, bell pepper, salt, pepper and mayonnaise. Spoon over bread.

  3. Combine egg, milk and margarine. Pour over chicken mixture.

  4. Cover and chill overnight.

  5. Before baking, spoon undiluted cream of mushroom soup over top, covering all.

  6. Bake at 350 degrees for 50 minutes.

  7. Sprinkle cheese on top during last 30 minutes of baking.

  • 1-2 chicken breasts (depending on size)
  • 1/8-1/4 tsp. Italian seasoning (enough to sprinkle on both sides)
  • 1/8-1/4 tsp. garlic powder (enough to sprinkle on both sides)
  • 1/8-1/4 tsp. basil (enough to sprinkle on both sides)
  • 2/3 jar spaghetti sauce (I used a basil tomato)
  • 2 servings spaghetti (cook as directed)
  • 1 Tbsp. butter
  • salt and pepper (to taste)
  • shredded mozzarella (for topping)
Instructions
  1. Take one fat chicken breast and cut it horizontally making 2 servings or 2 smaller chicken breasts.

  2. Melted your butter in the bottom of your pan and salt and pepper the chicken.

  3. Sprinkle garlic powder, Italian seasoning and Basil on top and brown the chicken one side. Flip it and put the remaining spices on the other side and brown it. 

  4. Pour your spaghetti sauce on top and let it simmer with the lid on. Cook to an internal temperature of 165 degrees.

  5. Cook your spaghetti according to the package instructions.

  6. Place your spaghetti on your plate. Spoon a little sauce over the spaghetti, then add your chicken on top of the spaghetti. Top the dish with shredded mozzarella,

Chicken with Almonds and Mushrooms

This recipe can be easily doubled for family size. You can also change it up by adding broccoli.

  • 2 chicken breasts, boned and diced
  • 3 Tbsp. oil
  • 2 Tbsp. soy sauce
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. cornstarch
  • 2 Tbsp. water
  • 1/2 cup celery, diced
  • 1/4 cup onion, diced
  • 1 cup chicken broth, hot
  • 4 oz. canned mushrooms, drained (can substitute fresh)
  • 1/2 cup almonds, blanched and toasted
  • 1/2 cup peas, fresh or frozen
  • 12 oz. bag of frozen broccoli pieces (optional)
Instructions
  1. Heat your oil in a wok and stir fry the chicken for 3 minutes.

  2. Add salt, pepper, soy sauce, celery, peas, onion and mushrooms.

  3. Cook for 2 minutes and then stir in your broth.

  4. Cover and cook over low heat for 5 minutes.

  5. Mix together the water and cornstarch. Stir into the mixture until it thickens.

  6. Add almonds and serve over rice.

Chicken Paprika

Ingredients
  • 4 lbs. chicken pieces
  • 4 Tbsp. shortening
  • 1 can cream of chicken soup (I prefer Campbell's)
  • 1 jar Heinz chicken gravy
  • 2 Tbsp. lemon juice
  • 1 tsp. paprika
Instructions
  1. In two skillets, brown chicken with 2 Tbsp. shortening for each pan.

  2. Pour off the fat.

  3. Mix all of your remaining ingredients in a bowl. Pour half into each of the skillets.

  4. Cover and cook on low for 45 minutes or until done, stirring occasionally.

  5. Remove chicken and thicken the gravy.
