My father-in-law is a big homemade oatmeal cookie lover. I decided to give a new recipe a try a few nights ago when he and my mother-in-law came over for dinner. They were a big hit, even with my youngest (super picky) and middle son (who had to be convinced to even try something that had oatmeal in it).
- 2 eggs
- 2 sticks salted butter, softened (not melted)
- 2 cups light brown sugar, packed
- 2 tsp vanilla extract
- 2 tsp cinnamon
- 1 1/2 cups all purpose flour
- 1 tsp salt
- 1/2 tsp baking soda
- 3 cups oats

Preheat the oven to 350 degrees.

Mix your eggs in a large mixing bowl.

Add your brown sugar and butter mix until blended.

Mix in your vanilla and cinnamon.

In a medium bowl, mix together your flour, salt, and baking soda.

Add it to the large mixing bowl in 3 batches, mixing until combined.

Add the oats and mix well.

Drop heaping teaspoons full of dough onto baking sheets, spacing them a couple inches apart. Bake 10 minutes. Repeat until out of dough.

Let the cookies cool slightly on cooling rack. Best served warm.
