Ingredients
  • 1 lb. ground beef
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 2 Tbsp worcstershire sauce
  • 1 lb. can of tomatoes
  • 8 oz. macaroni
  • 1 cup Velveeta cheese
  • 1/2 Tbsp. olive oil
  • 1 can mushrooms
Instructions
  1. Saute your mushrooms and put aside.

  2. In a saucepan, mix your tomatoes and worcestershire sauce and cook on low heat for 30 minutes.

  3. While your sauce is cooking, cook the macaroni according to the directions on the package.

  4. Brown your ground beef with your onion and green pepper in a large pan.

  5. Drain the macaroni and mix all ingredients. Pour into greased 9×13 pan.

  6. Cook for 30 minutes at 350 degrees or until cheese is melted and brown.

Here's a recipe for corn fritters that taste just like the ones they used to serve during Florida's Zellwood Corn Festival.

Ingredients
  • 6 ears fresh corn
  • 1 cup milk
  • 1 1/2 cups all purpose flour
  • 2 tsp. baking powder
  • 3/4 tsp. salt
  • 1 egg, beaten
  • oil for frying
Instructions
  1. Remove the husks and silks from the fresh corn, then rinse.

  2. Cut off the kernels, holding the knife at a slight angle.

  3. Sift together all purpose flour, baking powder and salt.

  4. Combine your beaten egg with your milk and corn kernels. Add to your dry ingredients and mix until your flour is just moistened.

  5. Drop your batter by Tablespoons into your deep fryer set to 375 degrees and fry until golden brown, about 3 minutes.

  6. Drain fritters on paper towels, then serve.

  • 1 head cabbage
  • 20 oz. chunk pineapple, with juice
  • 2 cups Miracle Whip
Instructions
  1. Shred the cabbage into a bowl.

  2. Add your pineapple chunks (reserve juice).

  3. Mix in the Miracle Whip until well blended.

  4. Add half of the pineapple juice from can and mix.

  5. Keep adding pineapple juice until desired consistency.

  6. Refrigerate several hours or overnight for best taste.

Adam’s Wilted Lettuce

  • 2 bags Romaine lettuce (approx. 9 oz. each)
  • 1/2 – 1 pkg. bacon (save all grease)
  • 1/2 cup sugar
  • 1/4 cup vinegar
Instructions
  1. Cut bacon into bits and cook in skillet, but NOT until crispy.

  2. When done, add sugar and vinegar and cook until almost carmelized.

  3. Shred lettuce into bowl and pour sauce over lettuce. Mix to coat.

  4. Serve hot.

  • 1/2 lb. bacon
  • 6 cups potatoes, cut into pieces
  • 1 tsp kosher salt
  • 3/4 tsp black pepper
  • 1 1/2 cups shredded cheese (cheddar or Mexican blend)
Instructions
  1. Cook bacon in frying pan, making sure slices don't over lap.

  2. Place bacon in cold oven and bake at 400 degrees for 16-20 minutes, until crisp. Then put aside.

  3. Place the potatoes in the bacon grease. Dump extra grease if more than 2-3 Tablespoons.

  4. Spread the potatoes in a single layer.

  5. Season with salt and pepper and bake for 20 minutes at 400 degrees.

  6. Stir well and bake another 20 minutes.

  7. Stir again and bake for 15 additional minutes.

  8. Chop bacon and sprinkle over potatoes.

  9. Cover generously with cheese and bake a final 3 minutes, or until cheese melts.

This quick and easy side dish only requires six ingredients and tastes delicious. This dish came about when I was trying to come up with a recipe that tasted like Boston Market's cinnamon apples. These are not the same, but they have a great flavor.

Ingredients
  • 4-5 apples
  • 4 Tbsp butter
  • 1/2 cup sugar
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 Tbsp flour
Instructions
  1. Rinse, peel and core your apples and place in a bowl to the side.

  2. Mix sugar, cinnamon, nutmeg and flour in a separate bowl.

  3. Melt your butter in a large non-stick skillet.

  4. When the butter is melted, add your apples and cook 3-5 minutes (until golden brown, but not until they are mushy).

  5. Remove from heat and add the ingredients from the second bowl. Mix and let it rest until glaze forms. If glaze does not form, put the skillet on low heat and stir until glaze develops.

  6. Serve hot.

  • 4 large potatoes
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 Tbsp rosemary
  • 1 Tbsp thyme
  • 1 Tbsp basil
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp pepper
Instructions
  1. Wash your potatoes. Do not peel them. Dice them into 1” cubes.

  2. Soak potatoes in cold water for up to 1 hour. Drain and dry potatoes before adding spices. This step is optional. If you don’t have time, you can skip this step.

  3. Preheat oven to 425 degrees.

  4. Place your spices and olive oil in a gallon size bag, zip and shake to mix. Add potatoes and zip and shake bag again.

  5. Spray baking sheet. Place potatoes on the baking sheet and bake for 30-35 minutes until brown and tender.

This recipe is very versatile, so feel free to experiment and make it your own. I used penne for this recipe, but you can also make it with macaroni or another pasta of your choice. With the shredded cheese, you could use sharp cheddar or mild. I used two cups of a mozzarella/parmesan mix, but you could change it out and use colby jack and it would taste great as well.

Ingredients
  • 1 lb dried penne pasta
  • 1 stick butter
  • 1 1/2 cups milk
  • 2 1/2 cups heavy cream (you can subsitute half and half)
  • 1/2 cup all purpose flour
  • 4 cups shredded medium cheddar cheese, divided (can substitute sharp cheddar)
  • 2 cups shredded mozzarella/parmesan cheese, divided (can substitute colby jack)
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1/4 tsp paprika
Instructions
  1. Cook your dried pasta as instructed on box. Add olive oil to water to prevent sticking.

  2. Preheat oven to 325 degrees.

  3. Grease a 3 qt (9×13) baking dish.

  4. While the pasta is cooking, mix your cheeses together in a medium size bowl.

  5. Mix your heavy cream and milk in a bowl and set aside.

  6. Melt your butter in a large saucepan over medium heat. Sprinkle in your flour, whisking constantly while adding. Cook for one minute, whisking constantly.

  7. Slowly pour in half of your milk mixture. Whisk constantly until smooth.

  8. Pour in remaining milk mixture and whisk constantly until thickened.

  9. Mix in spices and 1 1/2 cups of cheese mixture. Stir together to combine.

  10. Add another 1/2 cups of cheese mixture and stir until completely melted and smooth.

  11. In large bowl/pot combine your cooked pasta with your saucepan mixture. Mix well.

  12. Pour half of your pasta mixture into your greased baking dish.  Top with half of your remaining shredded cheese mixture.

  13. Pour remaining pasta mixture as another layer and then top with the remaining shredded cheese mixture.

  14. Bake in oven for 15 minutes, until your cheese is bubbly and lightly browned.

  • 6 medium size potatoes, washed
  • 1 Tbsp seasoned salt
  • 1 tsp pepper
  • 2 Tbsp vegetable oil (can use olive oil as well)
  • 2 Tbsp grated parmesan cheese
  • cooking spray
Instructions
  1. Preheat oven to 350 degrees.

  2. Wash and slice potatoes into strips using a slicer.

  3. Place potatoes and vegetable oil in a gallon size ziplock bag and shake well.

  4. Add seasoned salt, pepper and parmesan cheese into bag and shake well.

  5. Line cookie sheet with foil and spray with cooking spray.

  6. Spread out fries on tray and cook at 350 degrees for 25 minutes. Test by pushing down on the fries, if they smoosh then they are done. Thicker fries may need to cook longer.

Want to use your smoker for something other than turkey, well here's a macaroni and cheese recipe you cook in your smoker! Comes out creamy and flavorful. We've been told it's the best macaroni and cheese people have ever had and it's frequently requested.

Ingredients
  • pecan, hickory or mesquite smoking chips
  • 2 Tbsp butter
  • 1 1/2 Tbsp all purpose flour
  • 1 1/2 cups whole milk
  • 1 1/4 cups shredded sharp cheddar cheese (divided)
  • 1 cup shredded colby/moterey jack cheese
  • 1/2 cup shredded parmesean cheese
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 pound cooked elbow macaroni (according to package)
Instructions
  1. Soak smoking chips.

  2. Preheat smoker to 225 degrees. Add smoking chips.

  3. Prepare macaroni according to instructions on the package.

  4. While macaroni is cooking, melt butter over medium heat in large saucepan. Stir frequently.

  5. Whisk in the flour, continue to whisk for about one minute until the flour is incorporated. Stir frequently.

  6. Slowly whisk in the milk and bring to a boil. Reduce the heat to low and cook for five minutes until thickened. Stir frequently. Remove from heat.

  7. Add 1 cup cheddar cheese, colby/monterey jack cheese and parmesan cheese. Stir until cheese melts.

  8. Stir in salt, pepper and cooked macaroni.

  9. Spray pan with non-stick cooking spray. Pour in saucepan mixture. Cover top with remaining cheddar cheese.

  10. Place pan in smoker and smoke for about one hour, until the cheese is bubbly.
