Ingredients
  • 4 boneless pork chops
  • 2 Tbsp. honey
  • 2 Tbsp. maple syrup
  • 1/8 tsp. allspice
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. olive oil
Instructions
  1. Put olive oil in skillet and heat to hot.

  2. Cook pork chops 1-2 minutes on each side to brown.

  3. Mix all ingredients except the pork chops. Pull half to the side for later.

  4. Spread first half of mixture over top of pork chops.

  5. Place pork chops in an ungreased pan. Cover the top of the pan with foil.

  6. Cook at 400 degrees for 10-12 minutes, or until fully cooked.

  7. Heat second half of mixture in the microwave for 30 seconds. Spread second half of mixture over pork chops and serve.

Ingredients
  • 1 1/2 - 2 lbs. boneless pork chops
  • 1 Tbsp. barbecue rub (just use your favorite, I prefer Applewood)
  • 2 Tbsp. olive oil
  • 1/2 cup barbecue sauce (just use your favorite, I prefer Hickory Smoke)
  • cooking spray
Instructions
  1. Preheat the oven to 350 degrees.

  2. Spray the bottom of your baking dish with cooking spray.

  3. Place your olive oil in a bowl and rub the pork chops in olive oil and then cover them with the barbecue rub.

  4. Place the pork chops in the baking dish and cover with foil. Cook for 25 minutes.

  5. Remove from the oven and cover the pork chops with barbecue sauce. Leave the baking dish uncovered and return to the oven. Cook for an additional 15 minutes.

I'm always looking for ways to use my clay cooker. The meat always comes out so tender, as it does with this recipe.

Ingredients
  • 2 1/2 lb pork loin roast
  • 1 small onion, thinly sliced
  • 1 Tbsp Italian seasoning
  • 1/8 tsp cayenne powder
  • 1 can beef broth (14 1/2 ounce)
  • 1/8 tsp pepper
  • 8 small red potatoes, quartered (optional)
  • 2 Tbsp cornstarch
Instructions
  1. Soak clay cooker lid for 10 minutes.

  2. Make five horizontal cuts down center of roast. Stuff each cut with a slice of onion, reserving remaining onion.

  3. Place the roast in the clay cooker. Mix all the seasonings and sprinkle over the top of the roast.

  4. Pour broth around roast.

  5. Place remaining onion slices, pepper,  and potatoes around roast.

  6. Put the lid on and place the roast into a cold oven. Heat the oven to 325 degrees and cook for 2 hours and then check meat internal temperature. You may need to add 30 minutes.

  7. If you want a sauce for your meat, bring pan juices to boil. Boil 10-12 minutes or until reduced by half. In a small bowl combine 1/2 cup water and 2 Tbsp. of cornstarch. Blend till smooth. Add pan juices. Cook, stirring till mix is bubbly and thick.
