Smothered Hickory Chicken

Many times we modify our recipes based upon what we have in the house or how much time we have to cook something. This recipe came from the latter.

We wanted to make smothered chicken, but didn't have the time to marinade the chicken, so we tried something a little different. While the ingredients are similar, the few changes have a definite change on the flavor. Feel free to try them all and see what you like best or come up with your own variation.

Ingredients
  • 2 large chicken breasts (or 4 regular sized)
  • 2 Tbsp. Hickory BBQ dry rub (we used McCormicks Grill Mates Hickory BBQ)
  • 4-6 slices bacon (we used maple flavored bacon to make it sweeter)
  • 2 cups cheddar cheese (we used a hickory smoked cheddar)
  • 1 cup barbecue sauce (we used Sweet Baby Ray's Hickory & Brown Sugar)
Instructions
  1. Take your 2 large chicken breasts and butterfly them.

  2. Cook your bacon in a skillet

  3. Sprinkle your dry rub over all sides of the chicken and sear in a skillet with the bacon grease (use a 1 Tbsp. oil or more if you didn't cook your bacon in a skillet) until lightly browned.

  4. Cook in the air fryer at 275 degrees for 12 minutes or until it reaches an internal temperature of 165 degrees.

  5. Remove the chicken from the air fryer and place on a microwave safe plate.

  6. Cover each chicken breast with a layer of barbecue sauce.

  7. Add your bacon to cover the top of the chicken and cover with cheese.

  8. Heat in the microwave for 30 seconds or until the cheese is melted.
