Do you have a clay cooker, but never knew what to cook in it? Pot roast cooks great in clay cookers and comes out exceptionally moist. This is a super easy to cook recipe, just make sure to plan ahead so you have enough cooking time.

Ingredients
  • 3 lb roast
  • 2 cans cream of mushroom soup
  • 1 packet Lipton dry soup mix (choose your favorite beef flavor)
  • 2-4 Tbsp cornstarch (to thicken gravy)
Instructions
  1. Soak the lid of your clay cooker for 10 minutes.

  2. Place your roast into the bottom of the clay cooker.

  3. Mix all soup mixes in bowl and pour on top of the roast.

  4. Add enough water to cover meat, but make sure you have at least one inch of space below the top of the bottom portion of your clay cooker.

  5. Place clay cooker in cold oven and then cook for three hours at 350 degrees.

  6. To thicken your gravy, mix two Tablespoons of cornstarch with a 1/2 cup water and pour it into the gravy. Stir to mix. You can repeat this one more time if you would prefer thicker gravy. I would not recommend doing this more than two times, as it can distort the flavor of the gravy.
